The growth of global demand for these products is due to its naturalness, ease of transportation, long shelf life and a wide range of applications. Dried fruits are consumed without additional processing, added to cereals and breakfast cereals, used for baking bread, making various sweets, for making beverages (alcoholic and non-alcoholic). Dried vegetables are actively used in the preparation of soups, meat and fish dishes, various sauces and seasoning mixes.
In 2012-2016, China was the largest consumer of dried fruits and vegetables in the world. In 2016, 1.15 million tons of this product was sold in the country, which corresponded to 11.73% of the global sales volume. The second place in sales in 2016 was occupied by India with a natural indicator of 0.92 million tons, which accounted for 9.37% of total sales. The third place belonged to Brazil, where 0.50 million tons of dried fruits and vegetables were sold (5.10%).
In 2017-2021, the market will continue to grow at an average rate of 3.8% per year. According to the results of 2021, sales of dried vegetables and fruits in the world will amount to 11.78 million tons, which will exceed the value of 2016 by 20.6%. In the forecast years, some changes will occur in the sales structure of dried vegetables and fruits in the countries of the world. China will continue to occupy the leading position, in 2021 its share in the total sales volume of this product in the world will be 11.53%. The second place in this indicator in 2021 will be maintained by India with a share of 10.45% of all sales. Brazil will go down to fourth place with a share of 4.86%, while the United States will rise to the third place in the ranking of countries (5.02%).
